Baby Arugula Meets Baby Tomatoes

Arugula is a nutritional powerhouse, containing significant folate (folic acid) and calcium. In fact, it has more than eight times as much of this bone-building mineral as iceberg lettuce. Arugula is a cruciferous vegetable member, so go easy (no more than 1-2 servings per week) on this one if you have a slow thyroid. It contains cancer-fighting phytochemicals. Yay!

Throwing in baby tomatoes, especially the ones in season (so they are ripe and you can taste the sun in your mouth) makes them just such a lovely couple. Enjoy!

Serves: 4 to 6 servings
Ingredients
  • 4 cups of arugula
  • 1 cup cherry tomatoes
  • 1 avocado
How To Make
  1. Wash arugula and tomatoes.
  2. Halve tomatoes and mix them with the arugula.
  3. Spoon out avocado to small chunks and throw them in.
  4. Pour in 4 tablespoons of vinegar dressing.
This is a lovely, refreshing salad, great for lunch, and can be served with warm toasted bread, gluten-free bread that is, for some of us.
