Coconut Almond Banana Muffins

Serves: 6 muffins
- 2 ripe bananas, mashed
- 3 tablespoons virgin coconut oil, melted
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- ¼ cup coconut flour
- 2 tablespoons shredded coconut
- 2 tablespoons chopped almonds
- Preheat the oven to 350 degrees F.
- Combine the bananas, coconut oil, baking powder and salt in a mixing bowl.
- Mix the coconut flour into the batter until there are no lumps.
- Fold in in the shredded coconut and almonds.
- Bake for 30 minutes or until the tops are brown.
