Simple and Easy Ways to Add Coconut to Your Thyroid Diet

The coconut is not only a superfood but it is also vital in recovery from an autoimmune disease. It has wonderful healing properties for the digestive track. It is also rich in caprylic acid which is an anti-fungal that helps combat Candida. Apart from human milk, this is the only medium-chain triglyceride (MCT) oil and can therefore be ingested with no issues by people with gallbladder problems, or no gallbladder at all. As a saturated oil, coconut oil has a high burning point (way higher than olive oil) which makes it perfect for baking, sautéing and frying.
